Work one wrapper at a time and keep them barely softened — they keep hydrating after they leave the water.

Pea Shoot Fresh Spring Rolls

Serves 4 · 25 minutes · Snacks & sides

Ingredients

  • 12 — rice paper wrappers
  • 3 oz — pea shoots
  • 2 oz — sunflower microgreens
  • 1 — carrot, julienned
  • 1 — cucumber, julienned
  • 1 — avocado, sliced
  • ¼ cup — peanut butter
  • 2 tbsp — soy sauce or tamari
  • 1 tbsp — rice vinegar
  • 1 tsp — sesame oil
  • 1 tsp — honey or maple

Instructions

  1. Make the dipping sauce

    Whisk the peanut butter, soy, vinegar, sesame oil and honey with 2–3 tbsp warm water until pourable.

  2. Prep everything first

    Julienne the vegetables and lay all fillings out in a row. Rolling goes fast and you can't stop mid-way.

  3. Soften a wrapper

    Dip one rice paper in warm water for 8 seconds only. It should still feel slightly stiff.

  4. Roll

    Lay fillings in the lower third, greens last and generously. Fold the sides in, then roll tight. Repeat.

Grower's noteOverlap two wrappers if yours tear easily. The extra layer is invisible once rolled and saves a lot of frustration.
