Juice starts degrading the moment it's made. This is a make-and-drink recipe, not a make-ahead one.

If you don't own a juicer, blend and strain through a nut-milk bag — it works, it's just messier.

The recipe

Morning Microgreen Juice Shot

Serves 2 · 5 minutes · Juices & drinks

Ingredients

  • 2 oz — broccoli microgreens
  • 1 oz — radish microgreens
  • 2 — green apples, quartered
  • 1 — lemon, peeled
  • 1 in — fresh ginger
  • 1 — cucumber
  • pinch of cayenne (optional)

Instructions

  1. Wash everything

Rinse the greens and produce in cold water. Don't bother drying — it's going into a juicer.

  2. Alternate as you feed

Feed the greens between the harder items. Apple and cucumber push the leaves through instead of letting them pack.

  3. Juice the aromatics last

Ginger and lemon at the end so their oils rinse the machine as they pass.

  4. Stir and drink

Stir, add cayenne if using, pour into two small glasses. Drink within the hour.

Grower's noteRoll the microgreens into tight bundles before feeding them in. Loose leaves get pushed around the auger and yield almost nothing.
Why these greens

What the microgreens are doing here.

Raw

Fully uncooked

No heat at any stage, so the heat-sensitive compounds survive intact.

Two crops

Mild plus sharp

Broccoli gives volume, radish gives the kick that makes it taste like something.

Concentrated

Volume in a glass

Three ounces of greens is far more than most people eat in a sitting.

Make it yours

Variations and pairings

Sweeter

Add a pear or swap one apple for pineapple.

Sharper

Double the radish microgreens and add half a jalapeño.

No juicer

Blend with ½ cup water and strain through a nut-milk bag.

Wellness shot

Halve the apple and cucumber for a smaller, more intense 2 oz shot.
