Avocado toast fails when it's all fat and no contrast. Radish microgreens fix that in one move — heat, a clean snap, and enough structure to survive being piled on.

Use them raw and add them last. Radish shoots lose their bite within seconds of real heat.

The recipe

Radish Microgreen Avocado Toast

Serves 2 · 12 minutes · Breakfast

Ingredients

  • 2 slices — sourdough bread, cut thick
  • 1 large — ripe avocado
  • 1 oz — radish microgreens (2 loose handfuls)
  • ½ — lemon, juiced
  • 1 tbsp — extra virgin olive oil
  • ½ tsp — flaky sea salt
  • ¼ tsp — red pepper flakes (optional)

Instructions

  1. Toast the bread

    Toast until the surface is dry and firm — it needs to hold the avocado without bending.

  2. Mash the avocado

    Mash with lemon juice and half the salt. Leave it coarse; a smooth purée loses its texture under the greens.

  3. Rinse and dry the greens

    Rinse the microgreens in cold water and dry them completely. Wet greens slide straight off.

  4. Assemble and finish

    Spread the avocado, pile the greens on generously, then finish with oil, salt and pepper flakes. Eat immediately.
