Soft Scrambled Eggs with Microgreens

Low and slow is the only rule for the eggs. Curds should be small and the whole thing should look slightly underdone when you pull it.
The greens go in after the pan is off the burner, folded through twice.
Soft Scrambled Eggs with Microgreens
Serves 2 · 8 minutes · Breakfast
Ingredients
- 6 — large eggs
- 1 tbsp — unsalted butter
- 1 oz — radish microgreens
- 1 oz — broccoli microgreens
- 2 tbsp — crème fraîche or sour cream
- ½ tsp — kosher salt
- black pepper
- 2 slices — toast, to serve
Instructions
- Beat the eggs
Whisk the eggs with the salt until completely uniform — no streaks of white left.
- Cook low
Melt the butter over low heat, add the eggs, and stir constantly with a spatula. Take 4–5 minutes.
- Pull early
When the curds are set but still glossy and slightly loose, take the pan off the heat entirely.
- Fold in greens
Stir in the crème fraîche, then the microgreens. Two folds only. Serve on toast with pepper.

Six eggs and two ounces of greens is a genuinely balanced breakfast in eight minutes.
Heat plus mild
Radish brings the pepper, broccoli softens it. The mix is better than either alone.
No direct heat
Folding into an off-heat pan wilts them just enough without destroying anything.

Add cheese
A spoon of boursin or goat cheese stirred in with the crème fraîche.
Make it a wrap
Roll into a warm tortilla with avocado and hot sauce.
Dairy free
Olive oil instead of butter and skip the crème fraîche — add a teaspoon of water instead.
Bigger
Serve over a grain bowl base instead of toast.
