Thick-stemmed and genuinely substantial a microgreen sturdy enough to be the salad rather than the garnish on top of it.

Tastes like: Toasted sunflower seed. Nutty, mild, satisfying.

Use it on: Salads as the base, piled into sandwiches, blended into pesto with more backbone than basil.

Keep it: Refrigerated, 7–14 days. Rinse and dry completely before use.
