The single most common mistake with greens on pizza is baking them. They turn to ash.

Bake the pizza bare, then build the greens on top of the hot cheese so they wilt just slightly and stick.

Arugula Microgreen Pizza Finish

Serves 2 · 18 minutes · Mains

Ingredients

  • 1 — pizza dough ball (store-bought is fine)
  • ½ cup — crushed San Marzano tomatoes
  • 6 oz — fresh mozzarella, torn
  • 2 oz — arugula microgreens
  • 2 tbsp — olive oil
  • 1 oz — shaved parmesan
  • flaky salt and black pepper

Instructions

  1. Heat the oven hard

    Get it to 500°F with a stone or steel inside for at least 30 minutes. Heat is the whole recipe.

  2. Build and bake

    Stretch the dough, spread the tomato thinly, add the mozzarella. Bake 8–10 minutes until the crust blisters.

  3. Rest 60 seconds

    Let it sit out of the oven for a minute so the greens don't hit molten cheese.

  4. Finish with greens

    Pile the arugula microgreens over the whole surface, then oil, parmesan, salt and pepper. Slice and eat.

Grower's noteDress the microgreens in a few drops of oil in a bowl before they go on. They'll cling instead of sliding off the first slice.
